This picture looks disgusting but it was delicious. Once of our favorite Mexican restaurants has a rice and chicken entree (Arroz con pollo aka Hugo's Special). Rick and Riley often order it and share. About a year ago, Rick really perfected his grilled chicken. This weekend, something magical happened and with a few tweaky tweakies...I have an AMAZING homemade queso recipe that I hope I can replicate. Add in our yummy instapot rice and we have a winner. OOH and we switched from sour cream to Mexican crema (less bitter) and mmm.
